Method 1: Three Cup Chicken

Ingredients: chicken, basil, onion, chili, ginger, garlic, sesame oil/vegetable oil, light/dark soy sauce, rice wine, rock sugar, refined salt

process:

1. Wash the chicken with bones and chop it into small pieces, wash off the blood thoroughly, peel the onion and cut it into small pieces, slice the ginger, cut the red pepper into oblique sections, peel the garlic and set aside, and wash the fresh basil.

2. Heat the oil in a pan, pour in 2/3 cup of sesame oil, garlic, ginger slices and chili peppers and sauté until fragrant.

3. Add onion slices and fry until fragrant.

4. Pour the chicken pieces into the pan and stir-fry until the surface of the chicken is slightly colored, then sprinkle with a little salt.

5. Add 1 cup of light soy sauce and dark soy sauce and stir well to color.

6. Add another cup of rice wine.

7. Add the remaining 1/3 cup of sesame oil, stir well and add rock sugar until melted.

8. When the chicken is fully colored and flavored, pour in the fresh basil.

9. Turn to low heat until the soup thickens, stir-fry until the soup coats the chicken, serve on a plate and serve.

Method 2: Fried chicken with okra

Ingredients: chicken, okra, chili sauce, cooking wine, soy sauce, starch

process:

  1. Marinate the diced chicken with cooking wine, salt, soy sauce and starch for a while

  2. Wash the okra and blanch it in boiling water for 1 minute, remove the two ends and cut into thick slices

  3. Fry the chicken in oil

  4. Add okra and stir fry

  5. Add salt

  6. Add some chili sauce and stir fry evenly.

Method 3: Japanese chicken skewers

Ingredients: chicken, scallion, soy sauce, sugar, cooking wine

process:

  1. Chop chicken and scallions into bite-sized pieces. Mix all seasonings and set aside;

  2. Alternately thread the chicken and scallions;

  3. Grill the chicken skewers. I used a grill pan that Japanese people use to grill fish, but you can use a frying pan instead;

  4. Pour sauce into a pan and heat. until sauce thickens;

  5. Put the grilled chicken skewers in and coat the surface with the sauce evenly.
