2. Put the wok on the fire, add peanut oil, heat it up, add the star anise, scallion segments, and ginger slices and stir-fry, add the prawns and stir-fry to release the shrimp oil, add cooking wine, add salt, sugar, and clear soup and bring to a boil, cover with a lid, simmer and bake over low heat, then move the wok to high heat, add MSG when the sauce is slightly thick, and drizzle with sesame oil.

1. Remove the shrimp whiskers and legs, wash them and put them into a pot of boiling water.

2. Before boiling, add onion, ginger, MSG, cooking wine, salt, pepper and other seasonings into the pot. After boiling, skim off the floating foam. The shrimp will be cooked in about 3 minutes. Then remove from heat and pour into a bowl along with the soup. After it cools down, pour into a basin.

【Production process three】

1. Remove the shells of the river shrimps, leaving the tails and clean them. Drain the water, put it in a bowl and add salt.

2. Marinate with Shaoxing wine: Put the marinated shrimps on the starch, use a rolling pin to press the shrimps one by one into thin slices shaped like a pipa, put them into boiling water and blanch them. Wash the pea sprouts and blanch them in boiling water. Add cooked lard into a wok, heat it over medium heat until it is 60% hot (about 132℃), then add chopped green onion and ginger to fry until fragrant, add clear soup, Shaoxing wine, fine salt, bring to a boil, and add the shrimp chips.

3. After cooking for 1 minute, remove the shrimp chips from the plate. Thicken the soup in the pot with wet starch and bring to a boil. Add ginger juice and scallion oil and stir well. Quickly pour it into the plate with the shrimp chips and sprinkle with pea sprouts.
