The authentic beggar's chicken recipe is as follows:

Material:

Chicken, soy sauce, rice wine, salt, cloves, star anise, jellyfish, chopped green onion, ginger, diced chicken, lean pork, shrimp, diced ham, diced mushrooms, lard, lotus leaf, wrapping paper, fine linen rope, wine jar mud, wet cloth, sesame oil

1. Remove the feathers, organs and clean the chicken. Then add soy sauce, rice wine and salt to the cleaned chicken and marinate for 1 hour. Grind cloves and star anise into fine powder, add jelly powder and mix well, then rub it on the chicken.

2. Put the pot on high heat, add lard and heat until 50% hot, add chopped green onion and ginger to sauté, then add the diced chicken, lean pork, shrimp, diced ham and diced mushrooms into the pot and stir-fry until cooked. After removing from the pot, let it cool for later use;

3. Place a clove in each armpit of the chicken, wrap the chicken tightly with lard, wrap it with a layer of lotus leaf, then wrap it with wrapping paper, wrap it with another layer of lotus leaf, and then tie it with a thin linen rope;

4. Grind the wine jar mud into powder, add clean water to mix, spread it on the wet cloth (about 1.5 cm thick), then put the tied chicken in the middle of the mud, lift the four corners of the wet cloth to wrap the chicken tightly so that the mud sticks tightly, then remove the wet cloth and wrap it with wrapping paper;

5. Put the wrapped chicken into the oven and bake it on high heat for 40 minutes. If the mud becomes cracked, fill the cracks with mud. Bake it on high heat for another 30 minutes, then switch to low heat for 90 minutes, and finally switch to low heat for 90 minutes. 6. Take out the roasted chicken, knock off the mud on the surface of the chicken, untie the rope, peel off the lotus leaf and cellophane, and drizzle with sesame oil.
