How to cook royal vegetarian eel

1. After the dried mushrooms are soaked, use scissors to cut them into long strips along the edges, cut the coriander stems into sections, and chop the green onions, ginger and garlic for later use.

2. Coat the mushroom shreds with dry starch and set aside

3. Heat oil in a pan. When the oil temperature is 70% to 80% hot, add the mushroom shreds and fry until they are shaped. Remove from the pan and wait until the oil temperature rises to about 90% hot again. Fry again until golden brown. Remove from the pan and drain.

4. Leave some oil in the pan, add onion, ginger and garlic and sauté until fragrant

5. Add the fried mushrooms, add a small spoonful of vinegar along the edge of the pot, add salt and sugar to taste, sprinkle with coriander and stir-fry evenly.

6. Add sesame oil before serving and stir-fry evenly.
