1. Cut the onion into strips and the eggplant into pieces without cutting it to the bottom, as shown in the picture, and then divide it into several sections

2. When the oil is hot but not smoking, add the eggplant segments and fry until the eggplant changes color and becomes soft. Drain the oil. It is best to use kitchen paper to absorb the oil.

3. Use Thai sweet chili sauce, garlic chili sauce, tomato sauce, light soy sauce and sugar to make a small bowl of sauce. The proportion depends on personal preference. Use less light soy sauce, just one spoonful is enough. If the taste is strong, add a little salt

4. Put a little oil in the pan, turn to high heat when the oil is hot, add onions and stir-fry until fragrant, then pour in the prepared sauce and turn to medium heat, stir-fry for a few times and add the eggplant to let the eggplant absorb the sauce thoroughly.
