2.21 Wash and prepare various side dishes and set aside. I used baby cabbage, enoki mushrooms (enoki mushrooms need to be boiled first and then cooled) and celery (celery can be eaten with leaves). You can also add some bean curd sheets, tofu skin, mushrooms, or any other vegetables. You can add whatever you like.

3. Prepare the seasoning: one tablespoon of fermented black beans, one tablespoon of Pixian bean paste, one tablespoon of soybean paste, 5 grams of thirteen-spice powder, about 5 grams of black and white pepper powder in total, and about 3 grams of cumin powder. Use as much chopped garlic as possible, scallion segments, and ginger slices. (It’s slightly spicy, but won’t make you get irritated after eating it) In addition, if you really like spicy food, you can add some dried chilies to the pan, and then add some chili oil at the end… However, you might get irritated after eating it like this…

4. After the fish is marinated, preheat the oven at 200 degrees for five minutes, place the baking tray on the upper layer, and bake at 220 degrees for five minutes, then turn it over and continue for another five minutes. You want the skin to be burnt but the meat to be undercooked. Brush some oil on the fish before grilling so it won't stick to the foil.

5. Put a large soup pot on the fire, add a little oil, and when the oil is hot, stir-fry the chopped garlic and fermented black beans. Because I cooked a lot of dishes, I used a relatively large soup pot, otherwise, it wouldn’t be able to hold all of them, haha…

6. Continue to stir-fry the soybean paste and Pixian bean paste, add the boiled bone soup and appropriate amount of water, black and white pepper powder, thirteen spice powder, and cumin powder. Add appropriate amount of salt and chicken essence. The soup should be slightly salty so that the vegetables and fish can be cooked more flavorfully.

7. Put the processed vegetables in the pot and cook until they are well-cooked. This soup is fresh, fragrant and rich. It is delicious even if it is just cooked with vegetables.
