How to cook pickled cabbage pork ribs

1. Boil water in a pot, blanch the ribs for one minute to remove the blood, then wash them clean.

2. Add water to the pot again, put in the ribs and two slices of ginger. After boiling over medium heat, turn down the heat slightly but keep boiling for 15 minutes so that the soup will be whiter. Then turn to low heat and simmer for about an hour to an hour and a half.

3. You can add sauerkraut. I used bagged sauerkraut.

4. Add sauerkraut to the ribs and stew for another 40 minutes

5. Sprinkle some salt in the soup to make it just salty enough

6. It doesn’t matter if the cavity bones are a little bland, because we are going to prepare the dipping sauce, and the cavity bones will taste better when dipped in such a sauce. The method is to mix the mashed garlic, soy sauce, chili oil, fermented bean curd, chives and chopped coriander according to your favorite proportions.
