6. When peeling shrimps, cut off three half shrimps with tails, and leave three shrimp heads, and add them to the shrimp meat and marinate together.

7.1 Spread appropriate amount of shredded green onion and ginger on top.

8.2 Place the marinated hairtail on a plate, spreading it evenly to both sides, leaving a large gap in the middle.

9.1 While steaming the hairtail, cut the marinated shrimp into small pieces. (about the size of 3 corns)

10.2 Steam in boiling water for about 5 minutes until 80% cooked.

11. Take out the hairtail, push the green onion and ginger in the gap between the two rows of hairtail to both sides, put in the shrimp pieces, and place the shrimp heads and tails on the plate.

12. Steam in boiling water for about 3 minutes until cooked, then turn off the heat and simmer for about two minutes.

13. Take out after steaming and remove the steamed green onion and ginger in the plate.

14. Pour in appropriate amount of steamed fish soy sauce. (I added a little warm water to the steamed fish soy sauce because I think it would be more juicy without being salty)

15. Prepare some fresh shredded green onion, ginger and red pepper, mix them slightly, and sprinkle them on top.

16. Heat a proper amount of oil in a pan until smoking, and pour it evenly over the dish to bring out the aroma of scallions and ginger, and enhance the taste and mouthfeel of the dish.
