1. Mix buckwheat flour, all-purpose flour, baking powder, 5 grams of sugar, and 1 gram of salt.

2. Use warm water to make a smooth dough and place it in a warm place to rise.

3. Soak the dried mushrooms and black fungus in warm water, remove the roots, clean and set aside.

4. Add cooking wine, light soy sauce, chopped green onion, ginger powder, white pepper powder, sugar, salt, MSG, chicken essence and sesame oil to the pork filling, mix well and simmer for a while.

5. Use a knife to cut the kernels of fresh corn.

6. Chop the soaked mushrooms and black fungus into coarse grains, and chop the fresh corn kernels into coarse corn kernels.

7. Add the three fillings into the stewed meat filling.

8. Mix all the fillings, add appropriate amount of salt and stir well.

9. After the filling is prepared, let the dough rise to twice its original size.

10. Divide the fermented dough into small pieces of equal size, roll them into balls, flatten them, and roll them into small round sheets that are thick in the middle and thin on both sides.

11. Take one of the small dough pieces and put the filling on it.

12. Fold the dough and wrap the filling in it.

13. Wrap the buns one by one, put them in a pot of cold water (do not turn on the fire), cover them with a lid for a second proofing. The weather is a bit cool now, and it took me 30 minutes (15 minutes is enough in warm summer weather).

14. When the sugar has fermented, turn on the cold water and bring to a boil over high heat. After the water boils, simmer over medium heat for 15 minutes and then turn off the heat. Open the lid after three minutes.
