How to make dry tomato and egg noodles

A healthy diet can prolong a person’s life. So, how can we use “eating” to prolong our life? You still have to achieve it by yourself. Now, I will introduce the method of making dry mixed tomato and egg noodles.

1.Cut the tomatoes into smaller pieces so that more juice can be released during the stir-fry process.

2.1 Heat the pan with cold oil, you can use a little more oil. When the oil is hot, add the beaten eggs, use chopsticks to break them up, stir-fry until they are broken up, and set aside. (You can fry it for a little longer to remove the fishy smell better and let the egg crumbs hang on the noodles.)

3.2 Crack the eggs into a bowl, add half a spoonful of cooking wine, half a spoonful of water and a few drops of vinegar to remove the fishy smell and enhance the flavor, then beat thoroughly. (Adding vinegar and water can make the eggs more tender, and adding cooking wine can remove the fishy smell.) Chop the scallions and green onions into chopped green onions.

4.1 If there is not much tomato juice in the pot, you can add appropriate amount of water, adjust the salt, add eggs, and after the water boils, reduce the juice until thick.

5.2 Add more oil to the pan, add chopped green onions after the oil is hot, stir-fry until fragrant, add tomatoes and stir-fry until the juice comes out, then add one tablespoon of tomato sauce and two tablespoons of super fresh soy sauce and stir-fry to enhance the flavor and color.

6. Add a teaspoon of white pepper powder and mix well to remove the fishy smell and enhance the flavor. Put the fried tomato and eggs into a bowl and top with chopped green onions.

7. Heat oil in a pan, add Sichuan peppercorns and fry for a while until the aroma comes out, then discard the peppercorns.

8. Pour the hot oil over the shallots. (This is a different approach.)

9.Cook the noodles in boiling water, then cool them down and serve. Pour the tomato and egg stew on the noodles, mix well and eat.

Dry mixed tomato and egg noodles may seem complicated, but if you actually try it, you will find it is not difficult at all. The key is that you must master the specific steps and methods before you do it.
