How to make homemade fried noodles

This is wet noodles pressed by a machine bought at the vegetable market. If you can buy steamed fried noodles where you are, you can skip the first and third steps.

First, spread the purchased noodles flat on the steamer and steam them over high heat for fifteen minutes. Grease the pan with some oil to prevent it from sticking.

While the noodles are steaming, cut the side dishes and place them on a plate for later use.

Prepare a container, pour in light soy sauce, oil (to ensure the noodles are crisp and not sticky), salt, five-spice powder (if not available, use thirteen-spice powder instead), and a little boiled water. Stir well. (Because light soy sauce is also salty, use your finger to taste it when adding salt to prevent it from being too salty)

Pour in the steamed noodles and stir thoroughly with your hands to ensure that every noodle is fully soaked and flavored.

Put the seasoned noodles back into the steamer, steam for fifteen minutes and then remove from the steamer and start frying.

(Add the above seasonings according to the amount of noodles you want. If there is still seasoning in the container after the noodles are put into the steamer, pour it on the noodles. If the noodles are not completely soaked during the whole process, they will easily dry out and burn, affecting the taste.)

Stir the steamed noodles neatly with chopsticks (I usually use my hands) and set aside.

Heat oil in a pan, pour in the side dishes, add salt (just the right amount of salt for the side dishes, as the noodles have already been salted in the previous step), and stir-fry until cooked.

Pour in the noodles, stir-fry twice and serve.

Tips

It’s too late today and many vegetables are sold out in the supermarket. If you like, you can add some bean sprouts, green vegetables and the like. You can add any vegetables you like. I like spicy food, so I put a lot of chili. If you don’t like spicy food, you can use a moderate amount according to your taste.
