1.1 Change the water and simmer the pork tenderloin with ginger, scallion and star anise for 45 minutes.

2.2 Rinse the pork tenderloin with water to remove the foam.

3. The part that requires the most patience. Use a fork and your hands to tear the meat into thin strips. The finer it is, the fluffier it is. I had obviously been in school for a day and was feeling lazy, so I didn't tear the paper thin enough.

4. Finally I have torn it into a rough shape, and I must take a picture to commemorate it.

5. Add a little oil to the pan and stir-fry the shredded meat. First, add cooking wine and soy sauce, stir-fry until dry, then add all other seasonings and adjust according to personal taste. Stir fry slowly over medium-low heat. Use two forks to toss. Because the fine shreds will dry out quickly, you may not notice the large shreds when tearing them, but they will all appear after frying for a while. Use a fork to continue breaking up any large pieces. Keep frying like this until the shredded meat becomes dry and tender.

6. Let the fried shredded pork cool down and then use it or store it in a sealed bottle. If it's still too long, shorten it with scissors and the effect will be better.
