3. Remove the internal organs and wash them clean. Add 5 grams of brine, then control the water. Mix with 10 grams of peanut oil and set aside.

4. Soak 100 grams of black fungus in warm water until it is fully expanded.

5. Clean it thoroughly. Blanch the fungus in boiling water and drain.

6. Use a blender to chop the fungus into small pieces. Put it in a large container and mix it with 5 grams of oil for later use.

7. Wash the chives and drain the water. Cut into sections.

8. Cut into small pieces of 1 to 2 cm and put them into a container. Mix with 15g of oil.

9. Beat the eggs and mix well in a bowl.

10. Put 10 grams of oil in the pot and heat the oil to 70%. Pour the egg liquid into the pot and turn to low heat. Fry the eggs until cooked, then crush them and let cool.

11. Soak the dried shrimps, rinse them and drain the water.

12. Mix the dried shrimps with 10 grams of sesame oil.

13. Put all the prepared ingredients into a large container, add 15 grams of pepper, 20 grams of dumpling stuffing seasoning, and 15 grams of salt, and stir evenly in a clockwise direction with chopsticks.

14. Prepare 2 pounds of noodles. First, blanch half of the noodles with boiling water and then mix the other half with cold water. Finally, knead the noodles into a smooth surface and cover it with a lid and let it rest for 30 minutes.

15. Knead the dough, cut it into even-sized pieces and roll it into dough sheets.

16. Put the filling in the dough and fold it in half, pressing it firmly and folding it into edges.

17. Apply peanut oil to the electric baking pan, heat it up, put the wrapped chive boxes in, apply some more peanut oil on the skin, cover it, turn it to the pan-frying position and start frying.

18. Turn off the heat when both sides are golden brown.

19. Serve on a plate. The delicious scallop and chive dumplings are ready to be served. One bite and the scallops are so juicy and delicious!
