How to make Geoduck Sashimi

1. When purchasing geoduck, you should pay attention to the fact that if you press it with your finger, it will bounce back immediately, which means it is alive.

2. Soak the geoduck in water at 80 to 90 degrees for one minute. After soaking, it will be easy to peel off the outer layer of sand. Remove the shell and discard the gizzard lining.

3. Soak the geoduck in water with lemon slices and ice cubes.

4. Spread the crushed ice in the container.

5. Put the ice cubes into an ice crusher and crush them. If you don’t have an ice crusher, you can wrap the ice in a plastic bag and break it with a stick.

6. Make some decoration on the crushed ice, insert the clam shells on the crushed ice and place the cucumber slices against the clam shells.

7. Cut the salmon into slightly thicker slices and place them on the cucumber. Slice the softer meat close to the geoduck shell and place it on the bottom.

8. Slice the whiter meat that is exposed outside the clam shell.

9. Lay the cut slices flat and you are done.

10. Now it’s time to prepare the dipping sauce. Put an appropriate amount of light soy sauce in a small bowl and squeeze on mustard. When eating, dip the salmon and geoduck in the light soy sauce and mustard. The taste is amazing.
