How to make simple sauerkraut noodles

A simple home-cooked version of臊子面 will surely make you salivate. The colorful, fragrant and delicious food will awaken your taste buds once it is placed on the table. The preparation of the simple臊子面 is a bit complicated and the process is a bit tedious, but the taste is definitely great. Food with patience is full of warm feeling. It can be boiled, slow-cooked or braised, and the taste is very good.

1. Slice the tofu and fry both sides in a pan until golden brown, then remove and cut into dices.

2. Cut the pork belly into small pieces, just a little bigger than the fingernail. I cut mine a little big, and my friend from Shaanxi told me that it must be smaller. I will improve it in the future. Cut the carrots, potatoes, bell peppers, fungus, and day lily into small cubes for later use.

3. Beat the eggs and fry them into egg skins. Cut the egg skins into small pieces. Cut the garlic shoots into small dices. Chop the green onions and ginger into small pieces.

4. Put cooking oil in a hot pan. Add a little more oil, about five or six times the amount of oil for ordinary cooking. Stir-fry the pork belly with sauce on medium heat for ten seconds. Add chopped green onion and ginger and continue to stir-fry for ten seconds. Then add chili powder and stir-fry on medium and low heat. The frying process is really fragrant.

5. Stir-fry for half a minute to produce red oil, then add five-spice powder and pepper powder and stir-fry for ten seconds to produce aroma. Turn on high heat, add soy sauce and rice wine to sauté aroma, then add vinegar and bring to a boil. After the vinegar flavor comes out, pour in hot water. Use more hot water because this is a variety with more soup and less noodles. After boiling, add all the ingredients except garlic moss and diced egg skin and salt, open the lid and simmer for five minutes. Add the diced egg skin and continue to simmer.

6. At this time, you can use another pot to cook noodles. After cooking for ten to fifteen minutes, add the garlic sprouts and bring to a boil. Then you can turn off the heat. The sauce is ready. When the noodles are cooked, take them out and pour the sauce on them. The fragrant noodles are ready. Let’s enjoy them.

The simplified version of臊子面 is an easy dish to make. People who work overtime for a long time and have no time to cook can try making this dish. It only requires simple steaming and adding seasonings that suit your taste before serving.
