How to make homemade alkali-free fried dough sticks

1. Prepare the ingredients, put about 100 grams of dry flour into a bowl, and set aside aluminum-free baking powder, yeast, and an egg.

2. Put an appropriate amount of warm water in a small bowl. The water temperature should be slightly hotter than body temperature. Pour in an appropriate amount of yeast powder and dissolve it evenly.

3. Beat an egg into the flour and add appropriate amount of aluminum-free baking powder and salt.

4. Slowly pour the warm water with yeast powder into the flour, and stir it into a floc-like dough with chopsticks or your hands.

5. Use your hands to knead the dough until the surface is smooth. The dough should be soft. If it is sticky, apply some salad oil on your hands and then knead the dough until it is smooth.

6. Pour a little salad oil on the cover.

7. Cover the surface tightly with plastic wrap and refrigerate overnight.

8. The next morning, take out the dough that has been proofed overnight from the refrigerator. At this time, the dough has expanded to about twice its original size. Poke it with chopsticks and the dough will not bounce back.

9. Apply salad oil on the chopping board and flatten the dough into long strips as shown in the picture.

10. From left to right, cut the dough into medium-sized pieces. Stack two pieces of dough together and use a chopstick to press a mark in the middle.

11. Pour a large amount of oil into the pot. When the oil temperature reaches 50% hot, put in the processed dough sticks and fry them on low heat.

12. Use longer chopsticks to turn the fried dough sticks over from time to time so that both sides can be heated evenly.

13. When the surface of the dough sticks is golden brown, remove them from the dough and drain the oil.

14. Pair it with a cup of soy milk or milk and you have a delicious breakfast.
