1. Caramel part: 30g sugar plus 5g water, heat on low heat

2. Do not shake the pot at first. You can use a brush dipped in cold water to brush along the pot wall to flush the sugar to the bottom of the pot.

3. When the temperature rises and the water evaporates, the sugar water starts to turn yellow. You can shake the pot to make the color uniform. When the sugar water caramelizes and turns red, pour in 100 grams of hot water and 10 grams of sugar and stir evenly. Continue to heat until the boiling concentration comes out, then turn off the heat and cool

4. Pour the caramel liquid into a solid-bottomed mold and cool it for later use.

5. Take out the gelatin sheets from the refrigerator, pour out the water and put them into the caramel to melt

6. Pudding making: weigh and prepare the materials to prevent omissions

7. Put water in the pot and bring to a boil. Mix the milk and whipped cream. Stir evenly in hot water. Add sugar and melt.

8. Stir the pudding paste evenly

10. Pour the egg liquid into the pudding paste little by little and mix well.

11. Sprinkle the pudding paste twice because it needs to be cleaned up because of the stickiness of the egg liquid. The pudding paste is very delicate.

12. Making chiffon cake: Separate the egg whites from the yolks and beat the egg whites first. Beat with a whisk at the second gear for 30 seconds. When rough bubbles appear, add sugar.

13. Continue to beat at the second speed for 60 seconds, then switch to the first speed and beat for 45 seconds. The egg white should be very smooth and will not fall off even if it is bent or turned upside down.

14. Add vanilla extract and some sugar to the egg yolks and beat with a whisk for 10 seconds. Add corn oil and beat evenly. Add milk and mix well.

15. Add low-gluten flour and beat at low speed for 20 seconds.

16. Take one-third of the egg white and mix it with the egg yolk paste. Be careful not to make circles.

17. The cake batter is ready and set aside

18. Take out the mold and pour in the pudding layer. Note that the caramel should solidify. Then pour in the pudding liquid and let it stand for 30 minutes. This is what it looks like.

19. Pour the cake batter into the mold until it is 90% full

20. The whole pudding cake batter is ready. It should be three layers.

21. Preheat the oven and put hot water in the baking tray at 170 degrees for 10 minutes. Let the cake batter sit in the water. Set the oven temperature to 170 degrees for 45 minutes. Add hot water once in the middle baking tray.

22. When the color is satisfactory, add tin and bake until the whole process is completed.

23. Do not take it out immediately after baking. Let it cool in the oven for 40 minutes.

24. Take out the oven and continue to cool. It is obvious that there are three colors.

25. The surface is smooth and the layers are clear, but it is very tender and cannot be demoulded. It is recommended to refrigerate overnight before demoulding.

26. Use a scraper to remove the mold. Move it along the mold wall and then cover it with a plate and turn it upside down.

27. Note that the caramel base is liquid. When the cake is turned upside down, the liquid will flow out and it will be easy to demould the cake. Isn’t it cute to decorate it?
