1. Wash the grass carp and remove its head.

2. Place the fish head forward, the fish tail facing you, and the fish belly facing left. Press the fish body with your left hand, and use your right hand to slowly cut the fish's back from top to bottom, then cut to the left to separate the fish meat and bones. The fish meat was sliced ​​off.

3. Repeat the same method on the other side, with the fish bones on the top and the two pieces below being the fish meat.

4. Place the big end of the fish facing left, with the skin facing down. Press the fish with your left hand and hold the knife at an angle with your right hand to slowly slice the fish. Be careful not to cut your hand. Do not cut it with the first cut. Cut it with the second cut to form a butterfly shape.

5. The slices should be very thin, like good fish. Like butterflies.

6. Put the fish fillets in a basin, rinse with clean water and drain the moisture.

7. Cut the fish head into two halves and chop the fish bones into sections, but do not wash the fish head. Rinse the fish bones with clean water.

8. Add a little salt, white wine, ginger slices and green onion segments to the fish fillets and fish bones, mix well with your hands and marinate for half an hour.

9. Cut the onion into sections, ginger into shreds, garlic slices, cut the chili into dices, and cut the green onion into sections.

10. Prepare dried chili peppers and peppercorns.

11. Sauerkraut is part of the seasoning for sauerkraut fish. I only used sauerkraut and nothing else.

12. After the fish is marinated, pick out the ginger slices and green onion segments, add appropriate amount of corn starch, and mix well with your hands.

13. When the oil is hot, add onion, ginger, garlic and half of the chili pepper and stir-fry until fragrant.

14. Pour in the sauerkraut and stir-fry for a while longer. Fry until fragrant.

15. Add appropriate amount of boiling water.

16. After the water boils, add the fish bones one by one and cook for about 3 minutes.

17. Turn down the heat and use chopsticks to pick up the fish fillets and put them into the pot one by one. Make sure to spread them flat and put the fish fillets wherever there is space. After putting them in, add a little salt and chicken essence. Turn on high heat, cover the pot and simmer for two minutes. Do not stir with a spatula during the cooking, otherwise the fish will become broken into pieces.

18. Take a larger bowl, pour the fish into the bowl, add the scallion segments and the remaining chili pepper.

19. Add oil to a hot pan. After the oil is hot, turn off the heat and let it sit for a while. Then add the chili segments and peppercorns and fry until fragrant.

20. Just pour the oil on the fish fillets.

21. Add coriander and a pot of fragrant sauerkraut fish is ready. Are you drooling? Learn it quickly.
