How to make Matcha Durian Thousand Layer Cake

1. Prepare all ingredients

2. Beat the eggs with sugar

3. Add milk and mix well

4. Sift in low-gluten flour and matcha powder

5. Stir thoroughly until there is no powder

6. Sieve more than four times and refrigerate for one hour

7. Stir evenly after refrigeration, and the matcha pancake paste is ready

8. Take a flat non-stick pan, heat it over high heat, remove the pan from heat and pour in the pancake batter, quickly spread the pancake batter throughout the pan, pour out the excess pancake batter, put it on the stove and turn to low heat to bake.

9. Bake over low heat until bubbles appear and then remove from heat.

10. Use a demoulding knife to roll up the pancake skin and take it out.

11. Put it on a plate and use a small fan to help cool it down.

12. Put the cooled skin on another plate and shape it

13. Repeat steps 8-12 until all the pancake batter is used up.

14. Remove the core of the durian pulp, put it into a blender and blend it into a paste. Add sugar to the whipped cream and beat it until it becomes a creamy texture. Mix the two evenly and the durian cream is ready. Put it into a piping bag and set aside.

15. Take a 6-inch loose-bottom cake pan, wrap the loose-bottom with baking paper, put a pancake skin (smooth side down) on it and squeeze the durian cream on it.

16. Place another pancake skin on top and squeeze the durian cream.

17. Repeat step 16, adding a layer of butter until all the pancake skins are used up. Refrigerate for 2 hours to set.

18. After shaping, place the plate on the mold, turn it over, and remove it from the mold.

19. Gently take out the mold and carefully peel off the baking paper.

20. Cut into 8 pieces evenly

21. Prepare the cantaloupe pulp

22. Use the remaining durian cream to squeeze on the cake, put the cantaloupe-shaped flesh on it, and the matcha durian thousand-layer cake is ready.

23. Look at the cut surface of the cake. Isn’t it beautiful?
