1. The Yitong molasses red beans used here are also cooked by myself. Using Yuanzhen sugar can almost ignore the calories but it is still sweet. If necessary, you can look up the recipe I wrote earlier.

2. Take a group photo of the ingredients and weigh and prepare them first.

3. Put whole wheat flour + Yuanzhen sugar + yeast + yogurt + milk into the food processor. Don't add salt at this time. (If you don’t have a chef machine, you can knead the dough by hand or use a bread machine. You can search online for specific techniques.)

4. Start by stirring at level 1 for about 2 minutes to fully mix the dry and wet ingredients. When the dough is formed, you can switch to level 3 and stir for another 12-13 minutes.

5. Knead the dough for about 15 minutes from the start of adding the ingredients. At this time, you can check whether the dough has entered the expansion stage, that is, it is smooth and soft and can be pulled into a thick film. Add salt and continue stirring for 5 minutes. At this time, the dough will feel soft and bubbly in your hand, a bit like marshmallows. Pulling the dough can expand into a thin film that is not easy to break.

6. After rolling the dough into a ball, put it into the fermentation box and let it rise at 27 degrees. The first fermentation time is about 30 minutes.

7. If there is no fermentation box, apply some oil or dry powder on the surface of the dough at room temperature. After covering it with plastic wrap, put it in a place with a temperature of about 27 degrees to ferment. Put it in a cool place in summer and in a warm place in winter. You need to observe the condition of the dough yourself. When the dough is about twice as large, poke a hole in the middle of the dough with your finger, the dough does not collapse, and the hole does not rebound quickly, it means the fermentation degree is just right.

8. After the dough has risen, place it on the table, flatten it to release air, then cut it into 4 equal parts. Roll each small dough into a ball, cover with a plastic bag or plastic wrap and let it rest for 10 minutes.

9. After it is relaxed, start shaping. After each small dough is rolled into a ball, take a dough and roll it into an oval shape. Evenly spread the red beans cooked with Yuanzhen sugar in advance. (For cooking methods, please refer to the previously posted recipe for red bean with molasses.)

10. Roll it up and pinch the two ends tightly.

11. After rolling it up, fold it in half and press it down slightly. If you want the heart to be fuller, don’t press it too flat.

12. Move the dough to the baking tray before doing this step. Use a plastic cutter to cut a hole at the wider end. Do not cut more than halfway to avoid breaking the end during fermentation.

13. After cutting, fold the left side to the left and the right side to the right, and it will form a heart shape.

14. Put the baking tray into the fermentation box for the second fermentation, set it to 37 degrees for 30 minutes. Remember to add water to the water box to keep the humidity at 70-80%. If you use room temperature for the second fermentation, remember to cover it with a clean wet cloth that has been wrung out and put it in a warmer place.

After about 15 to 30 minutes or when you gently touch the side of the bread and feel some light bubbles, it is ready to go into the oven. If you want the bread to look bright golden, brush the surface with egg liquid.

16. When the fermentation is almost done, remember to preheat the oven 10 minutes in advance, set the upper fire to 180 degrees and the lower fire to 170 degrees, and put the baking tray on the bottom. My oven only needs to bake for 15 minutes before it is ready to be taken out of the oven, but the baking time will have a large error due to the oven fire, mold heat conduction, etc. Please observe the conditions of your own oven and adjust the time.

17. When baking for the first time, you can pay attention to when the aroma of bread comes from the oven. About 3 minutes after the aroma comes out, you should start to pay attention to the condition of the bread in the oven. When it is baked until golden brown, it can be taken out of the oven.
