Simple recipes from Northeast China

Northeastern cuisine is generally simpler and can be found in many Northeastern restaurants. The easier-to-make Northeastern dishes include Northeastern mixed vegetables, sauerkraut pork ribs, chicken stewed with mushrooms, etc. These Northeastern dishes are very easy to make and the taste is also suitable for the general public.

Northeastern home cooking recipes

1. Northeastern Mixed Vegetables

1. Ingredients for cooking oil: 500g corn oil, 3-4 bay leaves, 2 star anise, 3g cinnamon, 3g white cardamom, 2g pepper, 300g green onion, 200g ginger, 50g small onion, 50g garlic, 20g coriander root, 30g celery

Ingredients for the salad: 100g purple cabbage, 200g cucumber, 100g carrot, 150g baby cabbage or Chinese cabbage, 100g bean curd, 20g garlic, 100g lean meat, 10g dried chili

Seasoning: 2 teaspoons salt, 2 teaspoons chicken stock, 3 tablespoons soy sauce, 5 tablespoons vinegar, 6 teaspoons sugar

2. Cooking oil: prepare all the ingredients, soak the bay leaves, white cardamom, cinnamon and star anise in water for half an hour

3. Cut the green onion into shreds, ginger into shreds, small onions into slices, and garlic into slices

4. Pour oil into the pot, heat the soaked spices when the oil temperature is 30% hot, and fry until the spices are fragrant, then add scallions, ginger, coriander roots, etc.

5. Fry slowly over low heat until the onion is charred and dry. Remove all the ingredients and the remaining oil is the cooking oil. Fry the remaining cooking oil over high heat for a while to release the water vapor in the oil.

6. Mix the vegetables: Cut the purple cabbage and cucumber into shreds, no need to be very fine

7. Cut the carrots into shreds. It is better to cut them into thin strips, otherwise the taste will be bad. Cut the baby cabbage into shreds.

8. Cut the bean curd into strips and mince the garlic

9. Put all the seasonings except the dried chili in a bowl. Put all the seasonings except the dried chili in a bowl.

10. Mix all the vegetables with minced garlic, put the fried shredded pork on top to make a pointed mountain shape; pour a little cooking oil into the pot, add dried chili peppers and fry until fragrant, put the fried chili oil into the bowl of all the seasonings, and pour the seasoning into the mixed vegetables when eating

2. Pickled Cabbage Spare Ribs

1. Cut the sauerkraut and set aside. Wash the ribs repeatedly and change the water to remove the blood.

2. Add cold water, spareribs, onion, ginger, cinnamon, bay leaves, peppercorns, and light soy sauce to the pot.

3. Add a spoonful of lard to the wok.

4. Heat the oil until it is 60% hot, add the sauerkraut and stir-fry until it becomes slightly softened.

5. When the ribs are five-tenths cooked, add sauerkraut and continue stewing. Sauerkraut is not afraid of stewing and will taste better and better. When the ribs are almost cooked, add salt, turn off the heat and add chicken essence.

3. Chicken stewed with mushrooms

1. Ingredients: a native chicken, red mushrooms unique to Northeast China (also called pine mushrooms), other mushrooms can be used instead

2. Chop the chicken and rinse it repeatedly to remove the blood.

3. Blanch the mushrooms in advance, remove and drain for later use

4. Add oil to the pan, add the chicken when it is warm, stir-fry repeatedly until it changes color and becomes slightly browned, add cooking wine, light soy sauce, dark soy sauce, peppercorns, aniseed, green onion and ginger

5. Cut the potatoes into dice and set aside. Add the potatoes and stir-fry for about 5 minutes.

6. Add mushrooms and hot water to the same level as the chicken, cover the pot, bring to a boil over high heat, and simmer over low heat.

7. Add salt and pepper halfway through, cook over high heat until the sauce thickens, leaving some of the sauce (for a nice rice dish), turn off the heat, and add chicken stock.

Some of you like strong-flavored dishes very much. Therefore, they really wanted to try Northeastern cuisine. However, I cannot go to Northeast China to try authentic Northeastern cuisine. In fact, you don’t have to worry so much. You just need to know how to cook the dishes in the Northeastern home-cooked recipes. Even if you are in the south, you can still make a delicious table of Northeastern cuisine.
