2. Put the liquid at the bottom of the bread pan, put the flour on top, put the salt and sugar diagonally, and put the instant yeast in the middle. Start the bread machine and knead the dough. After kneading the butter for 15 minutes, add it in 5 to 6 times.

3. Knead until a thin film is formed and then ferment in the greenhouse.

5. Take out the dough to deflate it, add lemon zest and knead gently. Divide into equal portions, roll into balls, cover with plastic wrap and let stand for 10 minutes. (Let stand for 20 minutes in winter)

6. Put it in the refrigerator for fermentation and put a bowl of hot water underneath. Let ferment until it doubles in size.

7. Preheat the oven to 160℃, brush a layer of egg liquid on the surface, and bake for 25 to 30 minutes.
