How to make blueberry raisin cake roll

If you often go to restaurants for convenience and end up having gastrointestinal problems or diseases, it is not worth it. For the sake of our health, we'd better learn some home cooking methods and make them at home. The blueberry grape cake roll is simple to make and most people can learn it quickly.

1. Prepare the ingredients as shown below.

2. Separate the egg white and egg yolk and place them separately. Soak the raisins in warm water until soft, wipe off the surface moisture and set aside.

3. Make the batter with egg yolk: Mix the orange juice and corn oil, add flour and corn starch and stir until there is no dry flour, add egg yolk and stir until smooth.

4. Beat the egg white: Add a few drops of lemon juice (or white vinegar) to the egg white, beat with an electric whisk at low speed until bubbles appear, add the sugar in three batches, beat at medium-high speed for the first time until the volume doubles, beat at medium-high speed for the second time until obvious lines appear, and beat at low speed for the third time until the wet foam has large curved grooves, as shown in the figure below

5. Preheat the oven for 10 minutes. After beating the egg whites, add the egg yolk paste in 3 batches, stir evenly from top to bottom and then add the next batch until all is mixed. Add raisins and stir until well combined.

6. Pour the cake batter into a baking tray lined with baking paper.

7. Oven baking: After the oven is preheated, place the baking tray in the middle layer, adjust the upper and lower heat to 180 degrees, and bake for 25 minutes.

8. When the baking time is up, take it out immediately.

9. Turn the baking tray upside down, gently tear off the baking paper on the surface of the cake, and let it dry for 5 minutes.

10. Cover the cake with wax paper and gently turn it over. Cut edges around cake.

11. Scoop an appropriate amount of blueberry jam into a small bowl, mix well, and then spread it evenly on the surface of the cake.

12. Use a rolling pin to help roll up the cake with wax paper and refrigerate for 20 minutes to set.

13. Let it cool, take it out, cut it into desired size and place it on a plate.
