Homemade kelp pickles

1. Soak the dried kelp, wash and cut into shreds. Cut the green onions into shreds.

2. Add salt, sugar, vinegar, sesame oil, and garlic juice and mix well. Add some chili oil for a better taste. It tastes better after refrigeration!

1. Soak the kelp. The dried kelp you bought does not need to be washed. Put it directly into the steamer and steam it on medium heat for 30-40 minutes. After taking it out, wash off the dust first, and then soak it in water for more than two hours until the leaves are thick (if the weather is hot, change to clean water and continue soaking when the water becomes turbid)

2. Cut the soaked kelp into shreds and put them in a bowl for later use. Wash the carrots and cut them into thin shreds; wash the bean sprouts.

3. Boil water in a pot, add bean sprouts and blanch for one minute, remove and soak in cold water. Add a little oil to the remaining water in the pot, boil, add carrot shreds and blanch for another minute, remove and put into the water used to soak bean sprouts and cool together.

4. Mash two cloves of garlic, add sesame oil, cold vinegar, a little soy sauce, chicken essence, sugar, and salt, and mix well to make a sauce.

5. Put the cooled carrot shreds and bean sprouts into the large bowl with kelp shreds, pour in the sauce and mix well.
