Vegetarian Udon

Ingredients: Udon noodles, greens, carrots, hot dogs, meatballs

1. Cook the udon noodles until they are about 70% done, then rinse them in cold water and set aside.

2. After frying the meatballs and hot dogs, add the chopped greens and carrots and fry until they are 70% to 80% cooked.

3. Add some peanut oil and stir-fry the udon noodles.

Vegetarian Jjajangmyeon

Ingredients

Dried tofu – 10 pieces

Shiitake mushrooms – 5

Kelp – 2 pieces

Cucumber – 30 g

Carrot – 30 g

Shredded egg – 30g

Bean sprouts – 30 g

Edamame – 30 g

Noodles (your favorite type, cooked) – 1 handful

Seasoning

Ginger powder - a little

Star anise - 2

Sweet noodle sauce – 2 tbsp

Spicy bean paste – 1 tbsp

Vegetarian oyster sauce – 2 tbsp

Sugar – 0.25 tbsp

Sesame oil – 1 spoon

Cornstarch water - appropriate amount

1. Dice the dried tofu, mushrooms and kelp.

2. Heat the pan, add oil, sauté the minced ginger and add the star anise. Next, add the mushrooms and stir-fry until fragrant. Then add the tofu and finally the kelp.

3. Add sweet noodle sauce, vegetarian oyster sauce, spicy bean paste, sesame oil, sugar and water and cook for about 5 minutes.

4. After cooking until the sauce is reduced (about 15 to 30 minutes, depending on the heat and personal taste), add cornstarch water to thicken it. Finally, assemble the noodles, ingredients and sauce together.

Vegetarian Vermicelli Soup

Ingredients: 200g red noodles, half a cup of sweet potato starch, appropriate amount of water, appropriate amount of coriander, appropriate amount of celery

Seasoning A: 2.5 tbsp soy sauce, 1 tsp rock sugar, 1 tsp salt, mushroom powder, 1 tbsp oil

Seasoning B: some black vinegar, some vegetarian shacha, some sesame oil

1. Soak the red noodle in water for an hour, then wash and cut into pieces about 8cm long.

2. Take another pot and add water. After boiling, add red vermicelli and cook until it is appropriately soft.

3. Add seasoning A and reduce heat.

4. Add sweet potato starch and water to thicken.

5. Add seasoning B, coriander and celery when eating.
