First, use 105 grams of boiling water to completely dissolve the brown sugar. 4. When the temperature of the liquid drops to about 40 degrees, add salt, milk powder and high-sugar-tolerant yeast to the brown sugar liquid, stir well, and let it stand for about 3 minutes until the yeast starts to become active. 5. This is my Polish starter. It has been stored for two days. You can smell a very rich and unique aroma, which is super tempting. 6. Pour 105 grams of old yeast and high-gluten flour into the liquid and start kneading the dough. 7. After kneading the dough, wrap it with 20 grams of butter and continue kneading until the dough forms a glove film, which takes about 20 minutes. 8. If the dough can form a glove film without breaking, it is qualified. This kind of dough can be used to make very soft toast. 10. Divide the dough into three equal parts, cover with plastic wrap, and let them rise for 5-10 minutes. 11. There is no need for secondary fermentation because the Polish starter has been fully fermented, so here we can directly shape it and bake it after one fermentation. 12. Take out the small doughs, deflate them separately, and squeeze out the large bubbles inside the dough. 13. Wrap each of them with a layer of brown sugar. It is best to use larger grains so that the finished product will burst when baked. 14. Put the three rolled little fat balls into the toast mold and start fermenting. 15. Place a bowl of boiling water in the oven and close the oven door for fermentation. 16. Changing the boiling water two or three times during the fermentation process can speed up the fermentation process. 17. It takes about 50 minutes to fill it up to 90%. 18. Preheat the oven to 180 degrees in advance, then cover the lid and start baking. 19. Bake for 35 minutes, then remove from the mold immediately. Let the bread cool completely, then seal it in a bag for storage. Although restaurants offer many dishes and they taste good, they are not as hygienic as making them yourself.
