1. Prepare all the ingredients, dissolve the yeast powder with 30 grams of warm water and set aside, chop the cranberries, separate the egg whites and egg whites, and use dry containers. Set aside after processing.

2. Go to a larger bowl, pour in the weighed camellia oil and milk, and mix well.

3. Add egg yolk, condensed milk, and appropriate amount of sugar (I don’t put much), and mix well.

4. Pour in cake flour, custard powder (to add aroma and gloss), and the yeast powder that has been set aside, and mix.

5. Add fresh rice wine lees (for better fermentation, add it to the mixed flour and cake flour) and mix until there are no dry powder particles.

6. Start beating the egg whites, add white vinegar, shake well, and start the whisk working.

10. Beat the egg whites until there is resistance and a bit of hard foam (for beginners, it is better to beat them for a long time rather than a short time, because the air in the bubbles is used to hold up the cake, so it should be hard in the end.

11. Add 1/3 of the egg whites into the fermented batter and mix well in a straight line. Mix quickly (otherwise the bubbles will disappear easily and the batter will not hold up).

12. Pour the mixed batter into the remaining egg whites and mix quickly using the same method.

13. Pour into an 8-inch mold, place cranberries on the surface, and at the same time, turn the oven to 140 degrees, put a baking tray filled with water on the lower layer, and preheat for 10 minutes.

14. Then shake the cake a few times to remove the bubbles, put it in the oven, bake it at 140 degrees for 25 minutes, then change to 170 degrees and bake it for 25 minutes. After about 37 minutes of baking, the surface of the cake has changed color. Cover it with tin foil and continue baking! After taking it out of the oven, shake it twice immediately and turn it upside down quickly, leaving a gap at the bottom to allow heat to penetrate.

15. When it is completely cool, start demoulding with a demoulding knife.

16. The delicious cake is ready! !
