1. How to make classic homemade bean paste

Ingredients preparation

500 grams of dried broad beans, 750 grams of dried red peppers, appropriate amount of white wine and salt.

Method steps

1. Soak broad beans in boiling water, peel them and steam them in a steamer for 20 minutes;

2. After cooling, chop into small pieces, add white wine, soak for 2 days, and slightly dry in the sun;

3. Wash the peppers and boil them in boiling water for a few minutes, then remove them and blend them in a blender;

4. Mix the crushed chili and bean paste, add salt and mix well, transfer to a container, add a little vegetable oil to seal, and marinate for half a month.

2. How to make authentic homemade bean paste

Ingredients preparation

500 grams of Dahongpao pepper, 500 grams of Erjintiao pepper, 1 jin of millet pepper, 200 grams of green peppercorns, 2 jins of broad beans, 200 grams of flour, 2 jins of white wine, 1 jin of salt, and 4 jins of vegetable oil.

Method steps

1. Wash and shell the broad beans, boil them in boiling water for 1 minute, remove them and soak them;

2. Add flour to the bean paste, mix well, put it in a dustpan to ferment, and place it in an environment of about 40 degrees;

3. After one week, the bean curd will become moldy. Then put the moldy bean curd into a jar, add salt, mix, and then turn it over to dry in the sun.

4. After 50 days, the fermented bean curd is mature, soaked in white wine, the chili peppers are removed from the stems, cut into sections and marinated with salt;

5. Mix the fermented bean curd and chili peppers in a jar, add coriander, chili peppers and salt and mix well;

6. Pour in vegetable oil to isolate the air and ferment for 3 to 5 months.

3. Nutritional value and efficacy of bean paste

Bean paste is rich in protein, sodium, potassium, copper and other nutrients. Bean paste can enhance appetite, delay arteriosclerosis, lower cholesterol, promote gastrointestinal motility and enhance appetite.
