Cooking method:

1. Wash the lentils, drain them, stack three or four together and cut them into shreds. Cut the lentils into shreds with a knife, cut the chili peppers into shreds, and chop the garlic into minced pieces with a knife.

2. Heat oil in a wok and stir-fry the minced garlic over low heat. Turn to medium-high heat and add the shredded lentils and stir-fry for about three minutes.

3. Add a spoonful of light soy sauce and stir-fry evenly, add the chili pepper and stir-fry briefly, add about two spoonfuls of water, cover and simmer for two minutes.

4. Don’t add too much water. The purpose is to make the lentils better cooked and the finished product dry and fragrant.

5. After two minutes, the lentils will become noticeably darker in color. You can taste them to see if they are cooked. Uncooked lentils are poisonous. Turn up the heat, add half a teaspoon of salt and stir well.

2. Stir-fried lentils with dried chili peppers

Ingredients preparation: 200 grams of lentils, appropriate amount of dried chili, appropriate amount of salt, appropriate amount of peanut oil, appropriate amount of light soy sauce, and appropriate amount of white sugar.

Cooking method:

1. Wash the lentils, soak them in light salt water for 20 minutes and then rinse with clean water. Tear off the old threads of the lentil pods and cut them into oblique shapes so that they are easier to absorb the flavor (I cut the lentil pods with a knife to make them look good in photos. In the past, I used to split the lentil pods in half by hand and they tasted better when cooked).

2. Prepare the dried chili peppers and cut the garlic cloves. Heat the oil in a pan and fry the dried chili peppers.

3. Heat the oil in the pan again and sauté the garlic cloves. Heat the pan over high heat and add the lentils and stir-fry. While frying, drip warm water from the edge of the pan into the lentils. Be sure to stir-fry constantly. When the lentils change color, add half a bowl of warm water, cover the pan and simmer for 2 to 3 minutes.

4. When the lentils are stewed until the juice is almost dry, add the dried chilies and stir-fry. At the same time, add a little salt, a little light soy sauce, and a little sugar (chicken essence is also fine, but I don’t like it), mix well, and finally add a little peanut oil before serving, mix well and turn off the heat.

3. Stir-fried lentils and meat

Ingredients preparation: 280 grams of lentils, 2 green peppers, 220 grams of pork, appropriate amount of salt, appropriate amount of sesame oil, appropriate amount of dry starch, appropriate amount of cooking wine, appropriate amount of vegetable oil, appropriate amount of chicken essence, and appropriate amount of dried chili.

Cooking method:

1. Wash the pork, cut it into slices, add appropriate amount of sesame oil, salt and dry starch, add cooking wine and mix well, and marinate for a while.

2. Remove the bean tendons from the lentils, wash them and set aside.

3. Remove the stems and seeds of the green peppers, wash them with clean water, and cut them into oblique pieces for later use.

4. Pour clean water into the pot and bring to a boil. Add a few drops of vegetable oil and appropriate amount of salt.

5. Put the green beans into the pot and blanch them. When the beans turn bright green, take them out and drain the water.

6. Place the pot on the fire, heat it up, pour in an appropriate amount of vegetable oil and heat it up, then stir-fry the pot with dried chilies.

7. Add the meat slices and stir-fry; when the meat slices turn white, add the beans into the pan and stir-fry; add the green peppers and keep stir-frying.

8. After all the ingredients are cooked, add appropriate amount of salt; add appropriate amount of chicken essence and stir-fry evenly; remove from the pan and serve.
