Crispy Pork Pancakes

Food, clothing, housing and transportation are important components of life. Among them, "food" has always been the most important for Chinese people. Only by eating well can we ensure a good body. Only with a good body can we work and study better. The method of crispy pork pancake is very simple and it tastes very good.

1. Add a little salt to the flour.

2. Pour hot water and stir with chopsticks until it becomes floc-like and free of dry powder. (Different flours absorb different amounts of water, so it’s best to add water slowly)

3. Knead it into a slightly soft and smooth dough with your hands and let it stand for one hour. I usually knead the dough the night before and make it the next morning. The dough will be more resilient if it is left for a long time.

4. Divide the dough into small doughs of appropriate sizes according to the size of the pancakes you want to make. Relax for fifteen minutes.

5. Prepare the filling. Chop the pork, add dark soy sauce, salt, sugar, oyster sauce, pepper powder, chicken essence, eggs, a little sesame oil and a little cooking oil, stir in one direction, and cut the green onion into flowers for later use.

6. Use a dough rolling machine to roll the dough into a slightly thicker dough. If it is too thin, it will break easily when you spread the meat filling on it and then roll it.

7. Use chopsticks to scoop out the meat filling and spread it evenly.

8. Sprinkle with chopped green onions. Just add chopped green onion to the meat filling, mix well and spread it on without sprinkling.

9. Roll up slowly from bottom to top.

10. Stretch it slightly.

11. Roll it up from one end.

12. After rolling, flatten it with your hands.

13. Use a dough rolling machine to roll the dough into a pancake of appropriate thickness.

14. Prepare a bowl of mixed water with salt and chicken essence, heat oil in a frying pan, put the pancake in and fry over high heat until slightly yellow.

15. Turn the pancake over and fry it, then pour in salt water to cover the pancake. (The crust is lighter, so add salt to season it when frying, or sprinkle some salt when spreading the meat filling, then just add water at this time.)

16. Cover and simmer over low heat for a few minutes until the water is dry.

17. After the water is dried up and both sides are fried crispy, you can turn off the heat and serve.

18. If the pancake is big, you can cut it into slices and enjoy it; if it is small, it is also good to eat it as a whole!

19. The soft and crispy pork pancake is ready!
