2. Boil water in a soup pot, add lotus root slices and blanch for 3 minutes after the water boils.

3. Take out and drain, sprinkle a little cornstarch and mix well

4. Heat the oil in a pan until it is 60% hot, add the lotus root slices and fry until the surface is slightly charred.

5. Take out the lotus root slices and drain the excess oil

6. Leave some oil in the pan, heat it up again, add the chili sauce and stir-fry until the oil turns red

7. Add lotus root slices, soy sauce and stir fry evenly.

8. Add chili pepper, garlic slices and celery, and continue to stir-fry for two minutes.
