Method 1

Seasoning: 50 grams of salad oil, 20 grams of soy sauce, 15 grams of rice wine, 15 grams of white sugar, 8 grams of starch (pea), and 5 grams of sesame oil.

1. Wash the fresh mushrooms and soaked shiitake mushrooms, remove the stems, and slice them separately;

Ingredients: 750 grams of oyster mushrooms, 1 cucumber, 1 teaspoon each of scallion, ginger and minced garlic (5 grams x 3 = 15 grams), 6 dried red peppers, 1 teaspoon 5 grams of salt (for soaking oyster mushrooms), 1/2 teaspoon 3 grams of salt (for cooking), 1 teaspoon (5 grams) of sugar, 1 tablespoon (15 ml) of soy sauce, and 1/2 teaspoon (3 ml) of sesame oil.

1. Pick the oyster mushrooms, soak them in light salt water for 20 minutes, and then wash them one by one;

2. Pour clean water into the pot, heat it to boiling over high heat, add the oyster mushroom slices, cook until white powder emerges from the pot, continue to cook for 2 minutes, remove from the pot, rinse with cold water, and drain;

3. Brush the cucumber clean and cut it into diamond-shaped slices. Use your hands to cut the mushrooms into strips and squeeze out some water. Chop the onion, ginger and garlic and set aside. Wipe the dried red peppers with a paper towel, do not wash with water;

4. Pour oil into a wok and heat it over high heat until it is 50% hot. Pour in chopped green onion, ginger, garlic and dried red pepper. After the aroma comes out, pour in the oyster mushroom strips and stir-fry for 1 minute. Add soy sauce, salt and sugar and stir-fry for 2 minutes. Pour in cucumber slices and continue to stir-fry for 20 seconds. Drizzle with a little sesame oil before serving.

Ingredients: onions, carrots, mushrooms, green onions, ginger, cooking oil, salt, chicken essence.

2. Wash and cut onion into shreds, and carrot into shreds;

3. Heat the pot with a proper amount of cooking oil, add onions and ginger slices and sauté until fragrant;

4. Add shredded mushrooms, onions and carrots, stir-fry and add appropriate amount of salt;

5. Stir-fry for a while and add chicken essence.
