Tips for cooking alkaline noodles

1: Make baking soda: Sprinkle half a cup of baking soda on a baking tray lined with aluminum foil and bake in a 121℃/250℉ oven or toaster oven for 1 hour. If any baking soda is left, place it in a covered jar and store it indefinitely. Take a large mixing bowl, put in hot water first, then put in some baking soda, dissolve it in the water, then add cold water, and then the flour, stir into a coarse granular mass that does not look like a good dough.

2: Take the coarse dough to the workbench and knead it for at least 5 minutes. (This dough will be more like a tough boxing opponent than any dough you’ve ever made.) Cover with plastic wrap and let rise at room temperature for 20 minutes, then knead for another 5 minutes (you’ll want to swear and sweat at this point). Wrap with plastic wrap and place in the refrigerator to rise for at least 1 hour.

3: Divide the dough into 5 to 6 portions, flatten each portion using a pasta machine (an Italian pasta machine will also work), adjust the size of the dough press and put the noodles in one by one. The thickness of the noodles depends on personal preference, while the width and shape depend on how you cut them. I like to put the dough in the second smallest place, and then either cut it into thin strips by hand or use the thinner of the two cutting edges. Sprinkle with a little more flour to prevent sticking.

4: To cook the noodles, use a deep pot filled with a large pot of water. It only takes 2 and a half minutes to 3 minutes to cook thin noodles. When cooking noodles, check them from time to time. If the noodles stick together, soak them in cold water immediately after removing them from the pot to stop them from cooking and to wash off any excess starch. Finish!
