How to brew fermented glutinous rice

1. Cook the rice until it is cooked. Don't make it too soft, but a little hard. Then use a bowl or other container to serve it.

2. Use chopsticks to loosen the rice and cool it down to a low temperature, about a little warm.

3. Prepare the sweet wine yeast. I bought it in the supermarket. It is in powder form. My mother used to buy it in the old store in the vegetable market. It is in granular form.

4. Prepare half a bowl of cold water

5. Sprinkle the koji with your hands while stirring. Use cold water when stirring. Be skillful and don't use too much force. As long as the koji is fully integrated into the rice, it will be fine.

6. Finally, knead it into a ball, a smooth rice ball. If it is glutinous rice, it will be a glutinous rice ball, haha??

7. Make a hole in the middle of the rice ball and roll it into a round shape.

11. Put it in the quilt. If you have a yogurt maker at home, you won’t be as shabby as me. Please forgive me for being a poor person, so I can only go through the traditional process!

12. Three days later, it came out of the oven. It smelled so good, and the quilt had no smell at all.

13. Turn on the fire to boil water. After the water boils, put a few spoonfuls of fermented glutinous rice with some juice into the pot to cook. You can cook an egg in it. It will be beautiful and delicious. Finally, you can add brown sugar or white sugar if you have it, and you can enjoy the deliciousness! If you like to eat the rest cold, you can add cold boiled water and sugar and put it directly in the refrigerator. That way you can eat it anytime!
