Squid Ink Stew

Squid is a seafood product that we often eat. Squid not only tastes delicious, but there are also many ways to cook it. Some people like to stir-fry squid with vegetables, some people like to grill squid directly, and some people like to stew squid with other things, such as squid and ink. No matter in terms of taste or nutrition, it tastes delicious.

How to cook squid with ink

Material

200g squid, 2 tablespoons chopped onion, 2 tablespoons olive oil, 900ml fish stock, 200g short-grain rice, salt and pepper to taste.

Preparation method

(1) Use a knife to carefully cut open the squid ink sac, leaving about 2 teaspoons of ink for later use.

(2) Sauté chopped onion in olive oil until translucent, then add short-grain rice.

(3) Slowly add the fish broth and ink, stirring constantly, and cook over medium heat for about 20 minutes.

(4) Add squid and cook for about 3 minutes or until most of the liquid has dried up. Season with salt and pepper.

(5) Turn off the heat, cover with tin foil, and place in an oven at 250°C for about 8 minutes. Enjoy while hot.

How to deal with squid

Step 1: Cut off the head and body

Rinse it under the tap several times first, then cut the head and body apart with a knife.

Step 2: Treat the body

1. Use a knife to cut open the back and take out the two transparent, thin bones on the fishbone cartilage.

2. After cutting it open, you will find that the stomach is full of intestines pulled out. These internal organs are not edible. And the feces, wash them all off with water, leaving only the meat on the outside.

3. Tear off the black film on the outside of the body. There are a lot of dirt on it, so it’s best not to eat it. Besides, it is very tough and has a bad taste. It can be easily torn from the cut edge. After tearing it, it is a clean, white and tender piece.

Step 3: Processing the head

1. Next, clean the squid's head. Cut open the head and clean out the dirt inside.

2. Squeeze out the eyes and you will see black juice inside.

3. Squeeze out the teeth again. Teeth are generally not eaten.

4. There are many suction cups on the tentacles, which can be picked off.

5. Squid has many tentacles, so tear off the black film on them. This will take a little longer to clean up.

Tips: The teeth in the squid's eyes are usually removed. But if you want to eat it, squid eyes and squid teeth can also be eaten. After digging out the squid's eyes, the meat around the eye sockets is very elastic. The squid's teeth are located in the tentacles of the head. Excluding the black pointed teeth, it is also a dish often ordered by diners at barbecue stalls. But be careful when handling it, there is black ink in the squid's eyeballs, so be careful when squeezing. Squids have sharp teeth, so be careful not to scratch your fingers.

Generally, when you buy squid, the seller will remove the ink and ink bag from the squid's eyes. If he doesn't do that, remember to remind him when you buy it. Otherwise, if you clean it yourself, you may stain your clothes or contaminate the vegetables, making them black.
