How to make dumplings with amaranth filling

1. Remove the roots of amaranth and soak it in salt water for a few minutes

2. Wash the amaranth and drain the water

3. Chop the meat into small pieces (you can chop it into puree, but I just cut it into small cubes at home), and mince the green onion and ginger. Put the diced meat, chopped green onion and ginger into a bowl, add appropriate amount of oil, sesame oil, soy sauce and salt, stir in one direction and set aside.

4. Knead the dough with warm water and let it rest for about half an hour. Divide the dough into several pieces and roll them into long strips. You can cover it with plastic wrap to prevent the surface of the dough from drying out.

5. Chop the amaranth, put it in a bowl, mix it with the meat filling, and start making dumplings!

6. Sprinkle flour on the panel and cut the dough into several equal-sized pieces.

7. Sprinkle a little flour on the dough, flatten it, and roll it into dumpling skins.
