Swimming crabs can be fried with many foods, and the taste is particularly delicious, such as swimming crabs with scallions and ginger, stir-fried swimming crabs, and fried rice cakes with swimming crabs. 1. How to cook swimming crab with ginger and scallion

1. Clean the swimming crab, remove the tail and gills, brush it clean with a brush, split it in the middle of the crab belly, and then cut it into 6 pieces; smash the crab claws slightly with the back of a knife; cut the ginger into shreds, cut the green onion into sections, and slice the garlic;

2. Put a proper amount of cornstarch on a plate, and evenly coat both sides of the cut crab with cornstarch (to make the crab meat tender and lock the crab meat), but do not coat the claws and shell with cornstarch; heat up more oil in a pan, first add shredded ginger and garlic slices and stir-fry until fragrant, then put all the swimming crab pieces into the pan;

Stir-fry over high heat until the color turns red, add more rice wine, appropriate amount of sugar, and Maggi soy sauce (you can decide whether to add a little salt according to personal taste, as the soy sauce already contains salt) and stir-fry. You can add a little water to moisten the ingredients, sprinkle with chopped green onions and stir-fry a few more times before serving.

2. How to stir-fry swimming crab

Remove the large shell of the swimming crab, wash and cut into pieces, slice the ginger and garlic, and cut the chili pepper;

Heat oil and sauté ginger, garlic, peppercorns and chili peppers;

Add the swimming crab and stir-fry, then add salt;

Stir-fry for two minutes, pour in rice wine, appropriate amount of boiling water, soy sauce, add sugar, cover the pot and cook for five minutes;

Lift the lid of the pot, add chicken stock and stir-fry until the soup is dry, then you can serve!

3. How to make fried rice cake with swimming crab

1. Tear the rice cakes apart after purchase (I bought them in strips) and soak them in water (so they won’t stick together);

2. Wash the swimming crab, remove the gills, stomach and intestines, and cut into pieces;

3. Remove the rice cake from the water and drain;

4. Heat the oil in a pan, add the rice cake and stir-fry until soft, set aside;

5. Use the remaining oil from frying rice cakes to fry swimming crabs, add cooking wine, scallions and ginger and stir-fry until the crabs change color;

6. Pour the rice cake in and stir-fry together, then add a little water and cook until the soup is dry. Then add salt (if you like a little color, you can add some light soy sauce) and chicken essence and serve.
