How to cook pork slices with oyster sauce

1. Cut the pork into finger-thick strips, cut the cucumber, carrot, and hot pepper into diamond-shaped slices, and chop the green onion and minced garlic.

2. Put the meat into a container, add a spoonful of light soy sauce, a spoonful of cooking wine and appropriate amount of salt, and marinate for half an hour.

3. While the meat is marinating, prepare the sauce: put a little salt, appropriate amount of pepper, appropriate amount of chicken essence, 10 grams of sugar, 15 grams of oyster sauce, 5 grams of starch, and 5 grams of light soy sauce in a small bowl and mix well, then add 80 grams of water and mix well.

4. Add 30 grams of starch and 20 grams of oil to the marinated meat and mix well.

5. Slowly add appropriate amount of clean water and mix until it becomes viscous.

6. Put some oil in the pot and heat it to 70% hot, then put the meat into the pot one by one.

7. Fry until the surface becomes hard and then remove from the oil.

8. Heat the oil in the pan again and fry the fried meat again.

9. Remove from the oil and set aside.

10. Leave some oil in the pan, heat it until it is 50% hot, then add onions and garlic to fry until fragrant.

11. Add cucumber, carrot and hot pepper and stir-fry evenly.

12. Pour in the prepared sauce and cook until it becomes thick.

13. Pour the fried meat into the pan and stir-fry quickly to coat it with the sauce.

14. Serve on a plate.
