How to make pineapple cake (with pineapple filling)

1. Prepare ingredients: pineapple, winter melon and maltose.

2. Peel and seed the winter melon and cut into small pieces. Peel and dice the pineapple. Weigh the sugar and maltose and set aside.

3. Boil water in a pot, add winter melon, cook until done, then remove and rinse with cold water.

4. Wrap the cooked winter melon in gauze.

5. Squeeze out excess water.

6. Squeeze out the water from the winter melon and chop it into puree.

7. Use the same method to wrap the pineapple with gauze.

8. Save the squeezed pineapple juice for later use.

9. Chop the pineapple into puree.

10. Pour the pineapple juice, white sugar and maltose into the pot, bring to a boil over high heat, then turn to low heat and stir until the sugar is completely dissolved.

11. Pour in the chopped winter melon and pineapple and stir-fry slowly over low heat.

12. After the water evaporates and turns into yellow-brown, the pineapple filling is ready.

13. Serve and let cool for later use.

14. Prepare the ingredients for the puff pastry and soften the butter in advance.

15. Pour powdered sugar and salt into the butter.

16. Beat with a whisk until fluffy and white.

17. Add egg liquid in two batches.

18. Each time you add egg liquid, you must beat the egg liquid and butter thoroughly before adding the next batch of egg liquid.

19. Mix the milk powder and low-gluten flour evenly and sift them into the butter.

20. Use a spatula to mix and knead into a smooth dough and refrigerate for 30 minutes.

21. Divide the dough into 16 equal portions and knead them evenly.

22. Take a dough and press it into a dough with your palm.

23. Add appropriate amount of pineapple filling.

24. Use the base of your thumb to slowly push up the dough until it closes.

25. Use both hands to gently roll it into a round shape.

26. Line the baking tray with greaseproof paper, put the dough into the mold and gently press it into the shape of the mold.

27. Make all the pineapple cakes one by one.

28. Preheat the oven to 170 degrees and bake on the middle layer for 15 to 20 minutes.

29. Let the baked pineapple cakes cool down and then remove them from the mold.
