How to make salted egg yolk braised tofu

1. Use soft tofu and beat it into 1.5cm square blocks.

2. Chop some green onion, ginger, and chives into chopped green onions and set aside.

3. Prepare the seasoning. Use 20 grams of water to soak the cornstarch into water starch, and add a little chicken powder.

4. Peel the salted duck eggs and take out the yolks.

5. Don't discard the egg whites. Instead, chop the salted egg yolk into small pieces for serving. You can also break it into small pieces with your hands.

6. Boil a pot of water and add some salt.

7. Boil the tofu for two minutes and turn off the heat.

8. In another wok, add oil and stir-fry chopped green onion and ginger over low heat.

9. Add the other two salted egg yolks and stir-fry.

10. Add cooking wine. Drain the tofu.

11. After the smell of wine has dissipated, add the tofu and shake the wok to mix the tofu and salted egg yolk evenly.

12. Add light soy sauce and shake well.

13. Add enough soup or water to cover the tofu and cook over medium heat for seven or eight minutes. Shake the wok from time to time.

14. Thicken the soup when it is almost dry.

15. Serve on a plate.

16. Sprinkle with the reserved salted egg yolk and chopped green onions and done.
