2. Lotus Seed Paste Mooncake Production Method

Basic Ingredients: 1.25 kg crust, 6.5 kg lotus seed paste, 150 g egg for brushing

1. Divide the pastry skin and lotus seed paste into 40 portions each.

2. Press the dough into a flat, round sheet, put in the lotus seed paste and wrap it into a round shape. Use a wooden cake mold to print the cake. The edges and corners of the cake should be clear and the patterns should be distinct.

3. Place the dough on a cake plate and brush the surface with clean water to make the crust moist and heated evenly.

4. Bake until lightly browned. Take out the cake, brush it with egg batter, and bake it in the oven until golden brown.
