Method 1: Stir-fried bitter melon with shredded pork

Material

Main ingredients: 300g bitter melon, 50g lean pork

1. Cut the bitter gourd and marinate it with salt for a while;

2. Remove the bitterness and cut into slices;

3. Wash the pork and cut into strips;

4. Heat the pan, add appropriate amount of oil, and wait until the oil is hot;

5. Add the shredded pork and stir-fry for a while, then add the bitter gourd and stir-fry for a while;

6. Add appropriate amount of water and simmer for 10 minutes;

7. Add salt and MSG to season and serve.

1. Cut bitter gourd into thick slices, rinse with boiling water, then rinse with cold water, drain and set aside.

2. Cut the pork into shreds, sprinkle with salt and starch, and let it stand for 5 minutes.

3. Fry the garlic and black bean curd in a pan until fragrant, add the shredded pork, fry until the water is dry, add bitter gourd, oyster sauce, sugar, MSG, and sesame oil and serve.

Method 3: Stir-fried bitter melon with pork slices

Material

Bitter melon, pork tenderloin, cooking wine, salt, dry starch, salt, chicken powder

1. After buying the bitter gourd, soak it in clean water, then scrub the surface with a brush.

2. Cut the bitter melon in half and scrape out the pulp with a spoon, trying to scrape out the white part inside.

3. Cut into thin slices, sprinkle with a spoonful of salt, knead evenly with your hands, and let it stand for about 15 minutes

4. Cut the pork tenderloin into slices, add cooking wine, a little salt and dry starch, knead evenly with your hands, and let it stand.

5. Rinse the salted bitter gourd with clean water and drain

6. Before putting the meat slices into the pan, add some cooking oil and mix well, so that they will not stick together when put into the pan.

7. Heat up the oil in a pan, add the meat slices and stir with chopsticks. When the meat slices turn white, remove from the pan and set aside.

8. Use the remaining oil in the pan to stir-fry the bitter melon slices for about two minutes until the bitter melon is soft (if you like a crispy texture, just stir-fry it for a few more times)

9. Pour the cooked meat slices in, stir fry for a while, add salt and chicken essence and serve.
