How to make spicy dry-fried hairtail

When you have to continue working despite dragging your tired body, do you yearn for the food street on the roadside? In fact, it is unhygienic to eat on the roadside. You might as well learn to cook it yourself. Now, let me show you how to make spicy dry-fried hairtail.

1. Prepare the materials.

2. Rinse the peppercorns, chop the onions, ginger, garlic, and remove the seeds from the chili peppers and cut them into sections.

3. Kill and clean the hairtail, cut it into pieces of the same size, add a little strong liquor, salt and pepper and marinate for about 10 minutes. (Marinating with high-proof liquor can effectively remove the fishy smell of hairtail, which is better than cooking wine)

4. In a clean bowl, add half a bowl of water, then add a little pepper, chicken essence, sugar, balsamic vinegar, and cooking wine and stir well. (The fish has been marinated with salt, and the bean paste in step 10 is a bit salty, so there is no need to add salt to this sauce)

5. Drain the pickled hairtail and sprinkle a thin layer of dry powder on it. (If your pan is non-stick, you can skip this step)

6. When the oil in the pan is 70% to 80% hot, add the hairtail pieces and fry.

7. Fry the fish pieces until both sides are slightly golden brown, then remove from the oil and drain.

8. Leave some oil in the pot, sauté the remaining peppercorns until fragrant, then discard them.

9. Add the scallion, ginger, garlic and chili pepper and stir-fry.

10. Add appropriate amount of Pixian bean paste and stir-fry over low heat until red oil comes out.

11. Pour in the prepared sauce and bring to a boil.

12. Add the fried hairtail.

13. Bring to a boil over high heat then turn to medium-low heat to thicken the soup. Coat the hairtail with the soup, sprinkle with green onions for garnish and serve.

14. The amount of seasoning can be increased or decreased according to your own taste.
