Salted Peanuts

Ingredients: 500g fresh peanuts in shell

Seasoning: 10 grams of salt (about 1 tablespoon), 4 star anise, 1 small piece of cinnamon, 3 bay leaves, 1 small piece of galangal, 1 spoon of pepper, 3 slices of ginger, 1 cardamom, and 1 spoon of fennel.

1. Pour the peanuts into a basin and wash off the dirt on the shell with clean water repeatedly. Then use your hands to squeeze a hole in the peanuts so that they will be more flavorful when cooked. (If it is dried peanuts, you need to squeeze a small hole and soak it for a few more hours)

2. Put pepper, star anise, fennel, galangal, cardamom, etc. into the tea bag box and seal it.

3. Pour an appropriate amount of water into the pot, put in a tea bag box and ginger, cinnamon, salt, etc., pour in the peanuts and bring to a boil over high heat, then turn to medium heat. Continue to cook for half an hour and then turn off the heat. After turning off the heat, leave it in the pot and simmer for 1 hour before eating for a better taste. (If it is made from dried peanuts, the cooking time should be extended by 20 minutes to half an hour)

Spiced Tea Peanuts

Ingredients: 15g tea leaves, 500g peanuts, 15g salt, five-spice powder, chicken essence, scallions, ginger, and aniseed as needed

Preparation method

Wash the peanut meat, put it into the wok, add appropriate amount of water, and add the remaining ingredients.

Bring to a boil over high heat first, then simmer over low heat until cooked through.

Fermented Red Bean Peanuts

Ingredients: 1 pound of peanut kernels, 1.5 pieces of fermented bean curd, 5 cents of salt, 5 cents of star anise, and 3 cents of licorice.

Preparation method: First, remove the shells and select the peanuts, then boil the peanut kernels until they are 70% cooked, and then bake them in water boiled with star anise and licorice.

Fish Peanuts

Soak the dried fish first to remove the saltiness. Then remove and drain.

Peanuts, fried in oil, peel off the red skin.

Heat the oil in a pan, add some dried fish (not too much), half-fry and half-deep-fry until cooked, and do the same with the rest.

Leave some oil in the pot, fry a few dried chilies (depending on the spiciness), sauté chopped ginger, onion and garlic (shredded is also fine), add the fried dried fish, add salt (if it is not salty), soy sauce, cooking wine, sugar (more), simmer until the juice is absorbed by the fish, add peanuts and MSG and serve.

Cooking Tips

1. The peanuts must be cleaned and soaked in water without sediment, otherwise they will not be salted peanuts but mud peanuts!

2. If it is made from dried peanuts, squeeze the peanuts open after washing and soak them for 2 hours before cooking.

3. If you can’t finish eating the peanuts, put them in a fresh-keeping box and store them in the refrigerator. When storing them, pour some of the soup used to cook the peanuts into them so that the peanuts will not dry out and affect the taste.
