How to make Indian curry

1. Prepare all materials.

2. Wash the mushrooms quickly with water to avoid soaking and absorbing water, and cut them in half for later use. Cut potatoes, colorful bell peppers (half the amount), and carrot (one) into cubes.

3. Dice the colorful bell pepper (half the amount) and cut a carrot into small dices. Grind ginger into paste.

4. Prepare a stew pot. Pour in a little vegetable oil and slowly fry the mushrooms until they are crispy and fragrant.

5. Take out the caramelized mushrooms first.

6. Add diced carrots and diced colored bell peppers and stir-fry over low heat.

7. Stir-fry until crispy and fragrant.

8. Add peeled tomatoes and stir-fry until the water is dried up. Add in ginger paste and fry until dry.

9. Add garam masala powder and sauté until fragrant.

10. Add vegetable broth or water, potato and carrot cubes until the amount of water exceeds the ingredients. Add a pinch of sea salt, bring to boil then simmer until vegetables are tender.

11. In a frying pan, lightly stir-fry the eggplant, asparagus and seafood mushrooms, add to the curry sauce pot and bring to a boil. Before removing from the heat, add chopped okra and sea salt for seasoning, and drizzle with a little coconut milk.

12. You can also make delicious Indian curry using a variety of vegetables, and it goes really well with Indian naan!
