1. Prepare the ingredients for the pie crust: 250g low-gluten flour, 100g butter, 25g fine sugar, 80g water

2. Sift the flour into a steel bowl and add granulated sugar.

3. Add softened butter and knead it into coarse powder with your hands.

4. Then add water and continue kneading.

5. Knead it into a relatively smooth dough, wrap it in plastic wrap and refrigerate for an hour.

6. While the refrigeration time is going on, let’s make the pie filling. First, wash, peel, and core the apples and pears, then weigh them.

7. Cut 300g apples and 200g pears into small pieces.

8. Heat the oil pan, add 20g of butter, and pour in the fruit pieces after heating.

9. Add 65g of white sugar and continue to stir-fry.

10. Because sugar is added, the fruit pieces will release a lot of water. We can use this water to slowly cook the fruit over low heat.

11. Mix 15g of starch and 35g of water and add to the pot to thicken.

12. Finally, turn off the heat, add salt and lemon juice, stir evenly and serve.

13. Apply a little olive oil on an 8-inch baking pan to make it easier to remove the pie from the mold later.

14. Divide the pie crust into two portions in a 2:1 ratio.

15. Roll the larger portion into a round cake.

16. Place the rolled pie crust on the pie plate and press it gently with your hands to make it stick tightly to the pie plate.

17.Roll the rolling pin over the pie plate.

18.Cut off the excess pie crust.

19. Roll the smaller portion into a pancake.

20. Use a knife to cut the dough into long strips.

21. Allow the fruit to cool and add to the baking dish containing the pie crust.

22. Use the cut strips to create a cross grid on the surface of the pie plate.

23. Use your fingers to press the junction between the grid and the pie plate to make the excess pie crust fall off after weaving the grid and make the grid bond with the pie crust at the bottom.

24. Brush a layer of egg liquid on the surface of the grid, put the pie plate into the preheated oven, bake at 200 degrees for 15 minutes on the middle layer; then lower the temperature to 175 degrees on the lower layer, bake for 20-25 minutes, until the surface is slightly golden brown and then take out of the oven.
