1.12 Choose fresh green-skinned winter melon.

3. Cut the winter melon into square pieces about three centimeters in size. Use the tip of the knife to make several vertical cuts, leaving the tail intact.

4. Use the same method to make horizontal cuts to form a grid pattern.

5. Put oil in the pan, bring it to a boil, add the winter melon and fry until both sides are browned. Add 2 spoons of salt.

6. Add chopped chili and 1 spoon of salt and stir-fry.

7. Add ginger, garlic and bean paste and stir-fry, then add appropriate amount of water and simmer for a while.

8. When the winter melon turns transparent, you can put it on a plate.
