Traditional Chinese medicine believes that chicken is mild and warm in nature, sweet in taste, and enters the spleen and stomach meridians. Shiitake mushrooms are sweet, flat and cool in nature, and have the effects of nourishing the liver and kidneys, strengthening the spleen and stomach, improving intelligence and calming the mind, and beautifying the face. It can enhance immunity, prevent cancer and delay aging.

1. Wash the rice first, soak it in water for 30 minutes and set aside;

2. Debone half a chicken (or 2 chicken legs) (for easier eating), cut into 2.5cm pieces, and marinate with appropriate amounts of salt, pepper, and cooking wine for about 15 minutes.

3. Chop carrots and mushrooms into small pieces.

4. Cut the white part of the green onion into sections, and chop the green onion leaves for later use; mince the ginger, slice the garlic, and cut the red pepper into small sections.

5. If you are using an electric rice cooker, first enable the "fry" function. If you don't have such an electric rice cooker, you can use a regular pot or pan to do this part.

6. First, put the chicken pieces skin side down into the pan and fry.

7. Fry until one side is slightly brown, then turn over and continue frying until the whole side is slightly golden.

8. Add scallion, minced ginger, garlic and red pepper, stir-fry until fragrant, then add appropriate amount of cooking wine, sugar, soy sauce and oyster sauce and stir-fry.

9. Add mushrooms and carrots and stir-fry until mushrooms are slightly softened.
