The soup should be thicker. 2. Slightly spicy preserved radish and shrimp Boil the preserved radish in light salt water, soak it in cold water for 10 to 15 minutes, and then cut it into small pieces. Remove the seeds from the chili pepper and chop it finely with a knife. Heat oil in a pan, add dried shrimps and stir-fry over low heat until you can smell the aroma. Then add the preserved radish pieces and stir-fry until you can smell the aroma of the preserved radish. Then add half a small bowl of water and half a teaspoon of sugar and stir-fry. Continue to stir-fry until it is 80% dry, add the red pepper and stir-fry on low heat for three or two minutes, then add a little sesame oil and stir-fry evenly. 3. Shrimp and Egg Dishes Soak dried shrimps in cold water until soft, drain and cut into small pieces. Chop the western-style ham slices into small pieces. Smash the garlic and mince. Add salt to egg whites and beat until foamy. Add 1 tsp. 5 ml. of oil to a wok and heat over high heat until 70% hot. Pour in the whipped egg whites and fry until they become cotton-like. Serve. Add the remaining oil (1 teaspoon, 5ml) to the wok, heat over high heat until 50% hot, add minced garlic and chopped dried shrimps, sauté until fragrant, then add minced ham and chopped green onions, stir-fry evenly, serve, and sprinkle on the fried egg whites. |
