How to store braised pork soup

Braised pork soup is the key to making braised pork, and it is also the most difficult part of making braised food. As long as the braised pork soup is well made, it will be easy to make various braised foods. Just put the ingredients in the braised pork soup and simmer them slowly. The preparation method of braised meat soup requires the preparation of more ingredients, and attention must be paid to the proportions, so as to ensure that the braised meat soup has a stronger flavor and is conducive to the absorption of the ingredients used to make the braised meat.

Three principles for stew storage and management:

1. "Winter is long and summer is short." The old-style soup is rich in various nutrients from meat. Everyone likes the taste, and bacteria also like it. If you are not careful, it will go bad. When not in use, it should be boiled once a day for sterilization in the summer, and at least once a week in the winter. Even if your refrigerator is large enough to fit the jars, boil them once a week in the summer.

2. “Keep it clean”. Filter after each use to remove minced meat impurities and excess floating oil. There are many ways to filter. As a household brine pot with a small capacity, you can take out the ingredients after they have cooled down. When the debris is at the bottom of the pot, pour out the old brine, throw away the sticky impurities at the bottom of the pot, skim off the excess floating oil, boil it and store it.

3. “Add ingredients regularly”. According to the master's habit, after the marinade is used five times, new spice bags should be added and the old ones should be thrown away. As for water, sugar color, soy sauce, etc., add them at any time according to actual needs.

Additional information:

The braising soup used to stew dishes should be maintained regularly so that it can be used next time. The more times the braising soup is used, the longer it can be preserved, the better its quality and the better it tastes. This is why the “century-old braising soup” is so popular.

Only by properly preserving the brine can we ensure that the brine will not spoil and its quality will not be affected. Therefore, we should pay attention to the preservation and storage of the brine. When storing the brine, avoid using iron barrels and wooden utensils. Instead, use earthenware. Because pottery is thicker, it can avoid the influence of external heat. Ironware is easy to rust and woodware has odor. If it is inconvenient to use pottery, stainless steel can be used instead.
